Easter is ALL about the chocolate. I love chocolate! But, when there is so much sugar flying around it is also great to have some treats to share with babies and toddlers for a fun, healthy Easter. This lunch won’t be replacing chocolate eggs in our house, but wouldn’t it be awesome to have this healthy Easter lunch in between hunting for all those eggs left by the Easter Bunny?
This Easter bunny Yumbox has cheese and crackers, mini carrots, super-sweet sugar snap peas, yoghurt and seeds, raisins and a coconut and orange flavoured ‘bunny butt’ sponge treat on a grass of cress!
So the carrots are from Lidl – they call them Unicorn carrots – think that is pretty accurate don’t you? These mini carrots are so appealing even my little veggie dodger gave them a go! I’ve also had these from my local greengrocer so keep your eyes peeled!
The sugar-snaps look super Spring-like and green in the silicone cup. If I had a young baby with fewer teeth, I’d probably suggest steaming the veggies to soften them up.
The yoghurt has “bunny food” sprinkled on top (just some mixed seeds!)
Raisins…bunny poop? Sorry. Bit gross.
Now, for that lovely little bunny bum. It’s a really simple dairy free sponge recipe. I used a cake pop mold so they were a good size for little fingers. It uses just a little bit of maple syrup so can be served to under 1’s. I have made these a few times and they are really easy to freeze for another day.
You should definitely give this a go for Easter…or any time really! So much outdoor fun to be had this Springtime.
